My photo
We met over 8 years ago at church as Shaun was walking in and I was walking out. The few words exchanged sparked an interst that kept Shaun coming back. When we FINALLY began dating 4 years later we soon knew there was something special here. Our first year quickly flew by and we both decided we never wanted to spend another year with anyone else or without each other. We married in the place where it all began on January 1, 2011 (1/1/11) and gave birth to our beautiful daughter Ava Marie on September 22, 2011 our next little one, Clara Rose came 16 months later on February 11, 2013. This blog began with our preparation with our wedding and has entered into recording the days and events of our newlywed life and new motherhood.

Theme Thursday - Food - the easy peasy breakfast!

Ok, Cari, thanks for your theme this week as it gives me a perfect Segway into a little easy peasy breakfast that we've been enjoying round here lately.  I've missed the last few weeks "themes" and never got to finish my posts, so I'm determined to get this one in... before it's Friday (or Monday, or next Wednesday...or Thursday again).

Clara's over in the corner saying "mama-mama" and I'm severely resisting the urge to scoop her up and coo and cuddle her while Ava's sleeping, JUST so you all can know this easy breakfast tip!  (just so you know, I caved and came back later)

A friend posted THIS RECIPE on facebook recently and evidently there are a ton of variations to it, but this is our little twist. 

I usually make 3 or 4 at a time and send one each day to work with Shaun.  He does heavy labor all day and says this still fills him up at break time and holds him over till lunch.  So easy and healthy it's like eating a greek yogurt, a bowl of oatmeal and a whole piece of fruit all in one cup and as we're sort of "lazy" eaters and dont' like food that takes much effort, .

You will need:

Mason Jar(s) (or some other suitable container)

Greek Yogurt (I suppose you could use another kind of yogurt too)

Quick Oats (I use the packets because I had them in the house and the flavors added a little more shebang)

Fruit (this one has fresh peaches from the farmers market, but you could use blueberries, strawberries, whatever and I've even used the little fruit cups when I don't have fresh in the house)

Add about 3-4 heaping tablespoons of yogurt to each glass (I split the large container of yogurt 4 ways, but you could also use the 6-8oz individual ones.  This way's just cheaper for me)

 

Add packet of oatmeal (or apx 1/4 c. of Quick Oats)


 (I mix after this as it makes the "final" mix easier and less "spilly")

Add Fruit (I added a whole fresh peach diced, but it 's about 1/4 c. or so.  Or one of those little fruit cups)



Mix.

I sprinkled a few more peach slices on top to pretty it up, but this is optional.

Seal with tight fitting lid and put in fridge for min 8 hours up to 3 days.  I make them the night before on a Sunday and send one to work each day with the Hub and know he's eating right.  Easy!!!

Besides we love yogurt around here.

      Clara's 6months as of the 11th and Ava is exactly 23mo today. Next month on the 22nd she'll be TWO!!!

  5. Looks delicious! If you make yogurt in your crockpot and strain it through coffee filters to get the right thickness, you could cut the cost even more - the whey you strain out is good for smoothies and as a replacement to buttermilk :)

    Does the oatmeal get soft, being in for 8 hours? I love oatmeal and I love greek yogurt, but not sure if I'd like cold oatmeal...
